Ingredients:

  • Good Foods Guacamole (Spicy or Chunky)
  • Crackers
  • For garnish:
    • Mozzarella pearls
    • 20 Cherry tomatoes
    • Fresh basil leaves
    • 1 Red bell pepper

Instructions:

  1. Create the wreath by placing a small bowl upside down and laying the Good Foods Guacamole around it to form a wreath
  2. Garnish with tomatoes, mozzarella, basil leaves, and bell pepper as the bow
  3. Place the crackers along the outside of the wreath
  4. Enjoy!

Servings: 4-6
Prep Time: 10 minutes
Cook Time: 25 minutes

Ingredients:

  • 1 package (12 count) small flour tortillas (street taco size)
  • 2 cups cooked shredded chicken
  • 1 tsp taco seasoning
  • 1 10-oz can red enchilada sauce
  • 1 14-oz can black beans, rinsed and drained
  • 1 red bell pepper, diced
  • ½ cup whole-kernel corn
  • 1 cup mild cheddar cheese, shredded
  • Good Foods Chunky Guacamole

Instructions:

  1. Preheat oven to 350°. Prepare a muffin pan with non-stick cooking spray.
  2. Place a tortilla in each muffin cup, gently pleating the edges so they fit snug inside each cup (microwave tortillas in a paper towel for 10 seconds to soften first if needed).
  3. Bake tortilla shells for 10 minutes or until the cups have hardened on the edges.
  4. Meanwhile, combine chicken, taco seasoning, enchilada sauce, black beans, bell pepper and corn in a medium size bowl, stirring to combine.
  5. Remove tortillas from oven. Spoon enchilada mixture into each cup, filling to the top. Top evenly with cheddar cheese. Bake for 15 minutes or until cheese is melted.
  6. Remove from open and top with a dollop of Good Foods Chunky Guacamole for serving.

*Plant-based tip:

Omit chicken and use Good Foods Nacho Cheeze Dip as a topping after it’s baked (or mx in with enchilada sauce) instead of cheddar cheese!

Servings: 40 small quesadillas
Prep Time: 10 minutes
Cook Time: 15-20 minutes

Ingredients:

  • 20 soft flour tortillas (taco size), cut in half
  • 3 cups chicken breast, cooked and shredded
  • 2 cups Colby Jack cheese, shredded
  • 1 red bell pepper, seeded and diced
  • 1 medium sized red onion, finely diced
  • 1 large or 2 small jalapenos, seeded and finely diced
  • 1 cup taco sauce
  • 2 cups cheddar cheese, finely shredded
  • 2 tbsp fresh cilantro, chopped
  • Good Foods Chunky Guacamole

Instructions:

  1. Preheat oven to 375°. Line a baking sheet with parchment paper. Put a bowl in the center of the baking sheet to use as a guide.
  2. In a large bowl, combine chicken, Colby jack cheese, red onion, jalapeno and taco sauce.
  3. Add a spoonful of chicken mixture into center of cut tortilla. Roll into a cone shape being careful not to squish out the filling. Place the tortilla on the pan with the pointed end touching the bowl in the center of the pan. Repeat with around 12 more tortillas placing them around the bowl to create the bottom layer of the bloomin’ quesadilla.
  4. Sprinkle ¾ cup cheddar cheese on top of the bottom layer of quesadillas.
  5. Repeat the ring around the bowl for two more layers adding cheese between the next two layers and over the top layer.
  6. Remove bowl from center of ring. Place pan in oven and bake 15-20 minutes or until cheese is melted and edges of tortilla are crispy.
  7. Place Good Foods Chunky Guacamole in the center of the ring. Sprinkle quesadillas with fresh cilantro. Serve warm!
